200g of sugar 200g of butter or margarine 200 g self raising flour 2 apples 6 dried apricots 3 large eggs or 4 small eggs |

What to do |
Preheat the oven to 170 C 1. Mix the fat and sugar in a large bowl to form a cream. 2. Add the flour and eggs. 3. Beat well until a sloppy mixture is created, with no lumps. 4. Peal, core and slice the apples. Cut the slices into thin strips. 5. Slice the dried apricots and add both the apricots and the apple slices to the mix. 6. Beat gently to distribute the fruit through out the mixture. 7. Pour into a 9 inch cake tin 8. Cook for about 15 to 20 minutes, or until the top is browned and a knife inserted into the cake comes out clean. 9. Allow to cool, then turn out onto a dish. NB: Some ovens may burn the edges of the cake - don't worry, just use a sharp knife to trim off the edges. |
